Pre-Conference - Food for Health Workshop
AI in Food, Nutrition and Health:
Technologies, Use, Opportunities and Challenges
Workshop Overview
The 2024 CNS Food for Health Workshop will examine the evolving role of Artificial Intelligence (AI) in food, nutrition and health. Through the lens of food and nutrition researchers, healthcare, agriculture and industry, this workshop will help to form an understanding of what AI means within our varying sub-sectors, including an exploration of the opportunities, challenges, risks and limitations of AI in our field. The agenda has been designed to be highly practical with real-life examples of how AI is being used to advance knowledge and practice of the complex relationships among food, nutrition and health including, but not limited to, re-identification of patient data, race/sex bias in training data sets, ethical considerations. This will be a highly interactive educational event with audience Q&A throughout the day, and a culminating engaging panel discussion.
Learning Objectives:
By the end of this workshop, attendees should be able to:
- Cite key definitions and AI-related technologies and applications being used across food, nutrition and health.
- State the evolving role of artificial intelligence (AI) in the areas of food and nutrition research, healthcare, agriculture and industry.
- Practice the use AI in ethical responsible ways.
- Anticipate opportunities to apply AI technologies within our professional setting.
